Finally getting around to posting a new recipe. I wanted to post it before Christmas, but I had lots of family gatherings to get to. So I was in the kitchen often cooking a bunch of foods, some were huge family hits, such as Angela’s Crowd Pleasing Chickpea Caesar Salad. I even had a cookie! My childhood friend Justine baked some vegan snicker doodle cookies which made me really happy.

So this dish started out as an idea for Christmas day breakfast, but soon fell apart since it wasn’t a good dish for sharing. But instead really yummy for a single serving. It is easy enough to make, just a little planning. Just bake some apples, let cool, freeze, and blend. Simple enough right?

It also tastes amazing with the gingerbread granola I posted earlier this month. But you can honestly use any type of granola. I put pomegranates on top, but you can use whatever you want. I thought the pomegranates added a nice sweetness, but didn’t have too distinctive of a flavor.

Apple Pie Sorbet with Gingerbread Granola
An easy apple sorbet you can make with just an oven, freezer, and food processor.

Ingredients
  1. 1 lb apples*
  2. 1 frozen banana
  3. 3 tbsp + of choice milk
  4. gingerbread granola
  5. pomegranate
  6. maple syrup
Instructions
  1. 1 Preheat the oven to 425°
  2. 2 Slice apples leaving skins on, filling a pie dish or casserole dish. Place in oven for 45 minutes or until apples are soft.
  3. 3 Let apples cool, divide into two bags or containers. Try to spread the apples into a thin layer, so you can break into smaller pieces once frozen. Place in freezer overnight or until completely frozen**
  4. 4 In a food processor break frozen apples in pieces (using only one of the frozen containers, saving the other half for another day), toss in a half of the frozen banana, and the milk.
  5. 5 Pulse food processor, breaking down the frozen fruit. Scrape down as needed. You want to keep processing until the fruit ball up, usually this is when the fruit get an ice cream like consistency.
  6. 6 Serve in a bowl with granola, pomegranate, and maple syrup on top.
Notes
  1. * Feel free to bake more apples, this is roughly how much I used to get two servings.
  2. ** I suggest dividing up the apples so you can make one serving at a time. If you choose to, you can blend all at once.
