Cardinal Provisions

514 Bangs Ave Asbury Park, NJ 07712
website | facebook | instagram

I remember when I first started the blog, Alexa usually came to me because I had more vegan options in my area. Flash forward to today, now it seems like Alexa is sitting in the suburban vegan mecca. There are so many places I want to visit near her, but they are usually closed on the day I come to visit- Mondays. So Alexa suggested Cardinal Provisions, a brunch and lunch based restaurant. She had went before and thought I would dig it.

asksalexaAlexa’s note: Visiting Cardinal with Jen wasn’t the first time I had been there. I had actually gone on Valentine’s day with Mr. Ian, and on that day I had one of THE BEST waffles I have ever had. It’s definitely on my list of Top 5…because apparently I have that sort of list now. I believe it was a special for that weekend, but hopefully it will pop up again. The waffle was covered in caramelized bananas and thin mint crumbs.

That’s right…THIN MINT CRUMBS.

I loved the dish because 1) it was vegan and 2) it’s not something that I have see anywhere else yet almost resembled something that I might make for myself (and think “Alexa, you are cray cray.”) I was slightly hesitant about the mixture of banana and mint flavor, but it was fantastic. I had also had the nitro infused coffee with my food that morning and it made everything even more delicious.

She was right, I loved the place. If you have ever been into New York City for brunch and enjoyed it, you will love this place. The store is very small but has a lot of personality. I am not sure how common this style of restaurant is, but you are seated, and waited on, but you pay at the end at the cashier. There are some baked goods and juices that you can grab and take with you, making it a spot to actually get a breakfast “on the go”. There are adorable vintage tiled floors, cute metal backed seats, and vintage salt and pepper shakers at all the tables. Yup, they pretty much nailed the setting.

hawt-chick

Just wanted to point out that Alexa wore the exact same shirt when we went to MOGO– GET YOUR BLOGGING SHIT TOGETHER!

So is the place vegan? Uh… no. But the menu is very vegan friendly. There are only about two dishes listed as vegan on their breakfast/lunch menu, and three from their brunch menu but they have little Vs next to items that can be made vegan. This is a dream come true for vegans who love breakfast foods. It even looks like about half of the kids menu is vegan as well (mostly nut butter or jam sandwich combos and some veggies) If you are looking to grab a quick breakfast, you can get their vegan croissants and some fresh juice up at the counter. Oh you heard me correctly. Vegan croissants at a non-vegan restaurant. Although this might not happen every day, when we went they actually have a daily special that was vegan. Let’s face it, how often does that happen?

A word of caution. If you want to do the traditional brunch thing and do some day drinking, you might have to bring your own booze. Cardinal Provisions does not have a liquor license, so call ahead of time to see if it is okay if you bring your own champagne for mimosas. They also have nitro infused coffee and I fucked up and missed by chance to try freshly tapped nitro coffee. Also on the menu that would quench your cocktail thirst? Kombucha, bitters and soda, green, grapefruit, and orange juices.

So what did we get? Well, the day we went they have a special- a vegan burger on a either a roll or vegan croissant. It originally came with fries, but we were both in the mood for a side salad. The burger was topped with a pickled carrot slice, cauliflower, and artichoke. Let me tell you, it has been a long time since I’ve had a croissant, and this was much better than the ones I had in the past. The croissant was super flakey and buttery. The burger was also the best vegan burger I’ve gotten in a non-vegan restaurant. The burger was very solid, and didn’t smoosh out like most vegan burgers. The outside was charred beautifully giving a nice contrast to the flaky croissant.

asksalexaAlexa’s note: Since I love the place so much, I visited again without Jenny. The other dish that I’ve gotten here also involved waffles (I’m not sure if anyone else is picking up on a theme here or if it’s just me?), but it was the vegan version of Chicken and Waffles. In place of chicken they subbed in a mushroom that they were calling “Hen of the Woods”, which I believe is just a fried maitake mushroom. I loved the texture and taste of it, and as a vegetarian I can get pretty tired of mushroom consistency and flavor. It came with a jalapeño cashew remoulade layered on top and then syrup to go on top of all of that. Again, it was another dish where I could have been a mad scientist playing in my kitchen but it magically tasted fantastic once on the plate. This dish is (luckily) on the menu all of the time. I highly recommend it.

I also love the atmosphere like Jen pointed out. Not only is the decor really adorable, but the employees are super nice and are always willing to help you find a way to make whatever you want into a vegan friendly version of itself if it isn’t already. I haven’t had a bad meal there yet and I don’t expect I ever will.

burger

If you check out their website you might notice that they have both the restaurant and catering services. If you are looking to do a wedding shower, work event, wedding, baby shower, etc, they will work with all your requirements. I’ve been following their instagram account and have seen some photos of some all vegan catering jobs. Thinking about when Jon and I were planning out wedding, this would of been a great options. At the time he wasn’t vegan and I was trying to be. Cardinal Provisions would of given us a nice 50/50 menu of vegan and non-vegan options.

asksalexaAlexa’s note: Last note! If you are in the market for a birthday (or any celebratory) cake, they do that as well! A friend of mine ordered a cake from Cardinal for her birthday and it was actually the best cake I’ve ever had. And it was vegan!! The cake was moist, the frosting was delicious and didn’t taste overly sugary…it was sublime.

So we would both recommend this place if you want a fancy lunch out. It isn’t a 4 star restaurant, but not quite the place to go for a cheap meal either. If I was staying for vacation in Asbury Park I would recommend checking this place out at least once for lunch or brunch. That being said, for the price range for a lot of the nicer restaurants in this area it isn’t that much more.

Once I became a “Flexetarian” (flexible vegetarian: I am working more and more each day to be a full veggie-saurus, but sometimes eating meat -with exceptions- is hard for me to avoid at the moment) I started to take note of the people I follow in media who are vegan and vegetarian. The more I thought about it the more I felt as though they needed a shout-out and appreciation post, because these people are not only health, animal, and Earth conscious, but they are also just plain awesome. This will be an ongoing project, I think, seeing as I find more cool people who love the planet and it’s inhabitants every day.

Tyrannosaurus Lexxx on Youtube

hqdefault

I stumbled across Lex’s page a few months back after seeing a video from Laci Green that was about internet equality and making the internet a safe place for women. The main reason her page had popped out at me was mainly because I had created a character with the same name during college (she was a super-villain version of me that wore a silly dinosaur suit and had a fat Komodo Dragon as her companion…really old and badly drawn evidence here), Obviously I had to investigate! It turns out that Lex is a super awesome Vegan-British woman who also happens to be very funny and smart. I hadn’t actually found out about her veganism until I was searching through more of her older videos. All I had known was that she was a big proponent of Lush which specializes in cruelty free and natural based cosmetics and bath products. Along with her main channel (listed above) which is updated weekly with varying types of videos she also hosts a channel called “Girly as Hell“. It hasn’t been updated in about a year, but it still has a great amount of informative videos about veganism and cruelty free beauty products, as well as fashion and ‘haul’ videos.

 Daniel Bryan

Daniel-Bryan-2014-WM-30

While Daniel Bryan is not currently a vegan, he still tries to maintain a mostly vegan diet while being on the road for WWE. He has certainly mentioned his love for vegan food in a (somewhat) recent interview, but he’s been unable to continue his veganism because of a negative reaction to soy. Many “on the go” vegan products have a soy base, and while traveling at all hours of the night/day (and feeding themselves enough calories for an athletic body) it isn’t easy to keep to a strict diet like that. I also want to mention that he and his lovely wife Brie Bella are, as the call themselves, “locavores.” Being on the road as much as they are, they always make sure to post which local farm-to-table restaurant or coffee shop they visit. It’s adorable and I’m sure it helps out the businesses in some way as well! They also have a grey water system built into their backyard in Phoenix, Arizona. These two are probably some of the most earth conscious wrestlers I’ve ever heard of and I appreciate the fact that they don’t hide it to try and keep some sort of weird “street cred” in the wrestling world. It also helps to add to Bryan’s TV persona from time to time if the story calls for it.

Beside the fact that Daniel Bryan is a super chill guy, he’s also a fantastic athlete in the squared circle. He had two amazing matches during Wrestlemania 30 which led to him becoming the World Heavy Weight Champion (until complications intervened) and is currently the Intercontinental Champion. I could go on and on, and I wanted to post some of his best matches below but WWE keeps a pretty tight lock on their best material. I’ll just post my new favorite photo of Ian and I below!!

IMG_5684

Mr. Ian and I got to meet Daniel Bryan last month and I gave him a little drawing and a note telling him how much I appreciate him as an athlete. It was very brief, but it made my day (week, month, year). He’s also Ian’s favorite wrestler so it was nice to be able to go with him.

Good Karma Cafe

17 East Front Street, Red Bank NJ 07701
website | instagram | facebook

I’ve been wanting to check out this Cafe for a few years now, but every time I went to visit Alexa, the store always seemed to be closed. What a bummer! But we kept being persistent and waited till one day we could go and have it still be opened. Alexa has visited this restaurant on several occasions without me and is quick to note that this place is usually very busy. When we went we came during off hours and had the place pretty much to ourselves.

Bahn Mi Sandwich

Bahn Mi Sandwich

Good Karma serves a completely vegan and partly raw menu. The set up is more for grab and go cuisine, which keeps the price points cheaper for the meal. They divide the menu by snack/apps, salads, sandwich/wraps, entrees, raw foods, kids, smoothie/juices, and desserts. There is a lot to choose from, but some dishes overlap. For example there is a salad and wrap that both use BBQ tempeh. This keeps prep work to a minimum but gives customers lots of options.

We sadly, didn’t try any of their juices or smoothies but their juicing machine looked impressive and would deliver a great juice. Important? Yes, I’ve been to many restaurants that have juicers that leave pulpy drinks and charge an arm and a leg. In fact I thought their drink prices are fairly priced considering pre-made juice from Starbucks is pretty much the same price.

Barbeque Tempeh Wrap

Barbeque Tempeh Wrap

By the time Alexa and I got in we were pretty hungry, so we got a sandwich and a wrap respectively. Alexa got the Bahn Mi sandwich served with seitan instead of beef, pickled veggies, sprouts, and a delicious jalapeno aioli. This was Alexa’s first Bahn Mi sandwich so she couldn’t compare it to anything, but it was delicious regardless.

asksalexaAlexa’s note: I loved this sandwich. Everything tasted fresh and the sauce on the seitan was delicious. I’m usually more partial to tempeh but this item seemed too good to pass up. I think the only thing I would do next time is maybe request it on a wrap. This may sound sacrilegious but if there is too much bread then I get distracted from the rest of the food. I also have a very small mouth and cannot fit a real bite in…the bread was really good, but I personally would have preferred it to be all wrapped up together. I also loved the use of the sprouts – which may sound odd, but dishes that I usually happen to order have sprouts as a garnish. Let me tell you, those lil’ guys are a really refreshing addition to this item!

My main go-to dish at Good Karma is the Pineapple Mango Tempeh. It tastes great even as a takeout dish (and I would like to mention that I’ve never had a bad take-out experience with Good Karma), which is normally how Mr. Ian and I get food from here in the first place. That dish is a great mix of savory and sweet and includes coconut crusted tempeh in a pile of brown rice with seasonal veggies. The sauce on this dish is a creamy coconut Thai sauce and it’s almost like a curry. I feel bad because I want to try pretty much everything on their menu but this one just keeps reeling me back in! I also think it’s a good jump-start for anyone who hasn’t had vegan food before.

I got the BBQ Tempeh Wrap, which had tempeh, lettuce, cabbage and carrots wrapped up with BBQ sauce and a chipotle aioli.  This was an amazing wrap full of flavor and a great protein to veggie ratio. The wrap held together while I ate it so no sauce covered my hands.

Both sandwiches came with a side salad where you can pick your dressing. We both picked the carrot ginger dressing. I personally found the dressing tasty but hard to toss in the salad since it was more like a puree. It probably would of been better pre-tossed, though I understand the reasons why they don’t.

rawbrownie

After we ate I picked a dessert to go home with. I picked their raw brownies since I didn’t get a chance to eat any of their raw foods. They were pretty amazing, and well balanced between sweet and bitter chocolate. The brownie also had a nice occasional crunch from the walnuts. It was also nice to bring home a dessert to eat the next day.

asksalexaAlexa’s note: I once brought home a raw macaroon from Good Karma and that was really good as well. I am always interested in trying out their baked goods but am always too full after eating and can’t even think of putting anything else into my tum-tum. While they are not normally my favorite desert I would definitely recommend the macaroons as well.

Overall I have to say that Good Karma is great for no-fuss eating. If I lived in the area I probably would order take out often from the place. The prices though, might seem a little high but are probably average for the area. So keep that in mind if you are visiting from out of state. It is also worth noting that I am pretty sure their prices have changed from the menu listed on the website. There might be a change from the drinks they serve as well.

What should you eat when you go? Well here is the list of favorites from Alexa and Jen

  • Raw Brownies
  • Barbeque Tempeh Wrap
  • Bahn Mi
  • Pineapple Mango Tempeh

Dress: Old Navy | Jacket: Francesca’s | Boots: Unknown

It’d been quite some time since I had seen Jenny or been able to venture into Philadelphia, so when I had to get my passport I figured that was the perfect time to meet up! I know what you’re saying … ‘Alexa, you’ve never had your passport until now?’ and the answer is no! I have never travelled outside of the country before and my Step-Father was supposed to have some work offered to him over in Belgium. Sadly, that seems to not be happening as soon as I’d hoped…but at least I have my passport.

The weather was perfect for going into Philly. It was sunny and probably around 70 degrees which isn’t my ideal weather for October, but who am I to say anything?! Jenny and I walked all over the city before and after obtaining my passport and got to eat at Hip City Veg, which is definitely my new favorite food destination! But more on that later…notice anything different?

“Alexa?! When did your hair become candy colored!?” …my parents will wonder (Mommy was okay with it, just shocked. I still haven’t seen Dad or my Step-Mommy yet so we’ll see). My amazing friend Carolyn has done it once again and made my hair super fun. I have wanted pink hair since college but for some reason I never pulled the trigger. I had tried it once before on my own but the pink completely washed out and I had Anna’s hair before it was cool.

Who Wore It Best? More like Who Wore It FIRST?

Who Wore It Best? More like Who Wore It FIRST?

Now that I know someone who understands hair and it’s alien properties I can go crazy and try new things with a professional opinion and it’s so exciting! Carolyn is seriously amazing and wonderful and I don’t think I can say it enough.

My accessories from the day were a mish-mosh, as per usual. The two necklaces I was wearing are both from Urban Outfitters (before I completely stopped shopping there for a multitude of reasons), the one pictured is made of pyrite. It is one of my favorite pieces of jewelry because it looks like someone dug these stones right out of the earth and wrapped them in a chain, like something someone would find in an adventure-type film or show. There’s just something so natural and beautiful about it (even though I know this was made in a factory…obviously). My bracelets are a mix of Alex and Ani, Pandora, my favorite skull bracelet and my “Blaze” engraved bracelet on my other wrist.

And then Alexa transformed into a magical girl.

And then Alexa transformed into a magical girl.

The dress is from Old Navy and is probably one of the best items I have ever purchased from there. It’s a bit of a heavier material but because it’s black I can wear it during every season. It fits perfectly and flows nicely, the only problem I have with it is how easily it started to pill once I wore it a few times. The jacket is from Francesca’s, it is a lovely teal color that goes with almost everything I own currently, and I like it because it’s a bit of a heavier material as well which means I can wear it in the fall, spring and summer without another jacket on top. The hood is a super cute touch too. I got my boots for $20 from a store in South Carolina when I was visiting my parents, and I’m not too sure what the brand name is, but they’ve lasted me up until now since last winter, so I’m pretty pleased!

My name is Alexa and I love food.

My name is Alexa and I love food.

Hip City Veg was certainly the highlight of the day. Not only were Jenny and I starving by the time we got there, but the food was DELICIOUS. I can honestly tell you that I don’t remember exactly what I ate, I know it was some sort of amazing veggie burger Hip City Ranch Burger, sweet potato fries that Jen and I split, and a refreshing green lemon-aid. I just remember everything being perfect and wishing that my stomach wasn’t full so I could eat more, because I’m classy like that. 10 out of 10, will visit again.

Say what you will, but I find that there is almost something artistic about a messy work space in the kitchen.

Say what you will, but I find that there is almost something artistic about a messy work space in the kitchen.

I have been so bored with food recently…and that’s saying a lot! I have wanted to try out new recipes but my budget has been tight and I have had so much going on that I haven’t had the time to do anything, or at least it’s felt that way. Yesterday I buckled down and decided that no matter what – I was going to make at least ONE new thing to eat! I have gotten my body in the habit of trying to eat (or at least ingest) something green once a day and when I don’t get to do that it makes me grumpy. While there wasn’t too much green in the foods I ate yesterday I at least know that what I made was vegan/vegetarian recipes AND they were on the healthier side!

I found this recipe on Pinterest (originally from The Simple Veganista) and tweaked it a bit. I had been eyeing the recipe for a while and decided that yesterday was finally the day to try it out! I always tend to think of even the simplest recipes as time consuming, mostly because of all the chopping they would involve (I tend to add more vegetables or more of a vegetable even if it isn’t called for), and let me tell you…this is SO SIMPLE. There are only 3 ingredients that need chopping – if that even, and the curry sauce is really easy to make as well.

I am so excited because I have even more for the rest of the week! Can you say LUNCH?

I am so excited because I have even more for the rest of the week! Can you say LUNCH?

The only ingredients that were listed in Julie’s recipe were chickpeas, carrots, scallions, raisins and cashews. I obviously included the chickpeas and carrots, but replaced the scallions for the sweet onion that I already had in the kitchen and replaced the raisins with dried cranberries (or “craisins” if you will). I am not a huge fan of raisins and knew that these would give the right sweetness that Julie used the raisins for in her recipe. I also stuck with cashews because they are delicious. I also added some chopped up radish for an extra crunch and added flavor. Radishes are vegetables that I love but I never seem to use them in recipes that I end up making at home.

When I threw all of the ingredients for the curry sauce (curry powder, garlic powder, a pinch of salt, lemon juice and hummus) together it all seemed a bit too curry-ish, which I find is hard to accomplish most times. It may have been the hummus I used, I usually like Sabra as my go-to hummus, but this time I had just used the leftover Trader Joe’s (surprise surprise) hummus I had in the refrigerator. The texture was a bit off and it seemed quite salty, so I read Julia’s notes and she mentioned adding maple syrup or any liquid sweetener to take that edge off. After I added a smidge of my Trader Joe’s Maple Agave Syrup is was PERFECT. I put the salad on bread, made it into a sandwich and brought it to work. It’s a wee-bit messy because chickpeas are big and round**, but if that’s the only thing I had to complain about then I would say it all worked out pretty well.

03

I will definitely be making this dish again and I am so excited to be keeping up with The Simple Veganista! I always love discovering new blogs and it’s equally as lovely to find out that the recipes they post are delicious. I recommend this for easy lunches, and the recipe makes a decent amount so you’ll have it for a few people or a few days!

** QUICK NOTE FROM JEN: I’ve made some chickpea salads in my day. I recommend mashing them quickly before stirring in all the veggies and such. Just get a few crushes to help them stay together in a sandwich.

capemaybrewing

Labor Day has come and gone, which means that Summer is making a swift exit. With the last “real” summer weekend going by, we all decided to go on a day trip down to Cape May to see the beach and the Brewery.

The night before we left my friends Jon, his brother Matt, Keith, Mr. Ian and I all went down to the Stone Pony in Asbury Park to see The Gay Blades play! I haven’t seen them in quite some time and they really put on a great show. I was first introduced to this band by my boyfriend and long-time-companda Mr. Ian. They are a local rock/alternative group (but on their facebook page they describe themselves as “Genre Trash pop”…I’ll take it) that reside in Brooklyn, NY. Their first two albums are excellent if you’re into that genre of music, and their concerts are like one giant party so I’d also recommend seeing them live if you ever get a chance!

stonepony

Here’s one of their most recent music videos off of their second album.

The next morning Keith, his wife Jenine, Mr. Ian and I got up nice and early to drive down to Cape May. I had been to Cape May a bunch of times when I was younger, my family would go with all the kids and make it into a fun day trip or a nice long weekend. It is a really pretty beach town with a lot to offer, and since it had been a while since any of us had gone it was all very new and fresh. We also decided that it would be a really nice wrap up to summer to hit the beach and be kind-of “shore tourists” for a day. Our first stop was a little restaurant called George’s Place. We stopped there on a whim and came to realize that they had an AMAZING breakfast menu (not too sure if it was very vegan friendly, but I remember it being veggie friendly). Whenever I get the chance to go out to eat for breakfast I always tend to lean toward the sweeter side of the menu — which lead to one of the most delicious waffles I think I have ever had.

om-nom-4

Hey everyone … I finally MOFO’d!!! (It was definitely in September I SWEAR.)

I won’t lie to you, I have never actually made my own vegan meal before. That’s crazy right?! I have always just thought they would take a lot of time to prepare and I normally don’t have all of the ingredients that are necessary for them. When September rolled around Jenny told me about “Vegan Month of Food” and recommended that I try out a vegan recipe. I was definitely up for the challenge and then I found out that the recipe I made…wasn’t challenging! I was actually really proud of myself by the time it was done, and I like to cook, so I was happy during the entire preparation process.

I stumbled upon this recipe from Vegan Richa via Jen. She’s been following her (beautiful) blog for quite some time and now I am going to make it one of my favorite blogs too!

For some reason I never seem to remember how much I love cauliflower until it happens to be in a dish that I make. I know that it’s really good for you, but I think I always find it to be daunting  when I see it in the grocery store and figure I’ll never finish the whole head. After preparing the cauliflower for this recipe I have continued to make it that way up until it was all gone. Hurray! This vegetable is just so versatile that I actually found myself saying “wait…save that because you could use it for this dish instead”.

I also love collard greens, but I find that I have a harder time figuring out how to prepare them as well. I have only ever had them once before this, and it was when my Step-Mother prepared them (oh, they were delicious) for us when my parents were living in South Carolina. I like the bitterness of the leaf as well as feeling like I am eating something good for me. Lettuce can be tricky sometimes! Anyway, this was also very easily prepared – just throw your greens into a pan with a smidge of sesame oil, pinch of garlic salt and a pinch of salt and you just wait until they are a bit wilted. Done! Delicious!

om-nom-1

I’d made quinoa before, and while this was an easy preparation it never occurred to me to add things in while it was cooking. I don’t know why though, I guess it’s only because I never add anything to rice while it’s cooking and I make them the same way? The world may never know.

The only thing that was REALLY intimidating me throughout this experiment was the Peanut sauce. On Richa’s site the recipe originally called for almond butter, which I neglected to purchase. Luckily Richa mentioned that the almond butter could be substituted for with peanut butter! I love peanut butter!

I would definitely make this recipe again. It was a hit with everyone who tried it out and it was extraordinarily easy to make. I also think it has enough flavor but isn’t too intrusive so everyone can give it a taste without fear of disliking it. Thanks Richa! I will certainly be browsing her blog for more delicious recipes sometime soon.

*Note: I actually had extra food after making this meal, which was great! I saved some for Mr. Ian to bring to work for lunch, and the rest I saved for myself for lunch! The only thing I didn’t have leftover after giving Ian his portion was the collared greens, and this recipe is so simple that all I had to do was throw it in the pan with some garlic powder and oil and it was done in just a few minutes. I was so so pleased with the overall outcome of this dish.

WFDD 1

I feel as though you may all be getting the sense that Jenny is WAY more put-together than I am. I don’t always have the time to put delicious meals together (well, not AS delicious as Jen’s…but not bad!) and when I do I feel as if they just aren’t as grandiose or full of fresh farm ingredients. Not to say I don’t like eating healthy! I am also still living with my parents – so that sometimes makes the refrigerator situation a bit hectic. What I do know is that I enjoy cooking, but right now it’s just on a lower scale. As I was making my dinner (or “Din-Din” as the title would suggest) tonight I noticed that 99% of it came from Trader Joe’s, which just happens to be my favorite grocery store! They have great frozen food options, low prices, and I’m not worried about where the food is coming from. Their meats have a guarantee that they were free range and cruelty free throughout their lives (even though I am not buying meat anymore it is definitely something that I took note of) and they have a ton of vegan and vegetarian options around the store. I figured now would be as good a time as ever to start reviewing some of the food/products that I purchase from TJ’s all the time and spread the word of the great grocery deity.

Dinner: Trader Joe’s Tofu Nuggets with a Spring Mix salad (including mushrooms, english cucumber, shredded carrots and yellow papper).

Sauces: Trader Joe’s Chipotle Mango Ginger sauce, Trader Joe’s Balsamic Vinaigrette, Sriracha

Living the childhood dream of eating nothing but nuggets.

Living the childhood dream of eating nothing but nuggets.

The Nuggets: I picked these up on a whim one day as I was going through the frozen food section. I figured it was worth a shot and it looked as if they were easy to prepare and would be good to bring to work. Turns out – they’re pretty delicious! Even Mr. Ian likes them! I put them into my toaster oven for about 10 minutes and they get a nice crispy outer layer but are still soft on the inside, which includes tofu, carrots and edamame. These tofu nuggets are also great because they are really reasonably priced, I think the bag only cost me $3 or $4? I checked the bag for ingredients and noticed that it was certified vegetarian, not vegan though. As much as I wanted this to be a super simple vegan meal for MOFO … I failed. I tried guys I promise!

You may not believe it... but there is DEFINITELY some lettuce under there!

You may not believe it… but there is DEFINITELY some lettuce under there!

The Salad: I want to start this off by saying that I wish I had a CSA near me or was able to go to more farmer’s markets. I love the idea of buying local produce and being able to use it all in my meals…but unfortunately I have to settle for now. When I go to TJ’s I usually end up getting a few different bagged lettuces (I know..it’s never really something I thought I would do!!) and they tend to be pretty solid for what they are. I like to get some darker and leafier greens because of their health value and mix it up with just a little bit of butter lettuce to make it a little crispier. This salad only contains mixed greens though! I also LOVE cucumber – so I accidentally cut up more than I originally planned on…woops!
Note: While I normally don’t buy much produce from Trader Joe’s (I find that it’s just not that great in quality and not very extensive so I go to the supermarket closer to my house for all of that) I will say that their cucumbers, yellow/red/green peppers, mushrooms and carrots are all good and delicious. I have never had any weird problems with them in the past and can feel comfortable that it won’t go bad in a day or so (I haven’t had great luck with their apples…).

Sweet & Spicy...the perfect combo!

Sweet & Spicy…the perfect combo!

The Sauces: I love sriracha. I am surprised that this bottle has lasted me this long. I’m pretty sure that I use it for almost everything, and tonight was no exception! The mango ginger chutney sauce seems to be a fairly new product at Trader Joe’s, they has it EVERYWHERE the first time I picked it up. I love all of those flavors so I figured they would be 1) delicious together and 2) delicious on other things. It’s already a little bit spicy on its own, but I wanted more so I added the sriracha for that extra kick. Turns out it was a good choice!

dressing

When I was younger I was never really a fan of any other dressing besides ranch…or any other creamy dressing. I think the flavors may have just been slightly too strong for me? Not too sure…but I haven’t had ranch in years because I found out that putting it on a salad is defeating the purpose of a salad! Trader Joe’s (Giotto’s??) balsamic is perfectly tart and savory, and it doesn’t have random floaty bits in it like some other balsamic dressings. Whenever I run out of it I go into panic mode because all of the other salad dressings in the house are mediocre at best.

So I guess it seems that it’s pretty obvious that I enjoy Trader Joe’s…if anyone else who reads loves it too let me know in the comments! If you have a favorite item I might go pick it up and review it here :). Life is too short to not try new things.

I was so excited about this new recipes I posted it RIGHT AWAY. Yup no tweaking, nothing. I had to post it as soon as I could. I pretty much only eat raw foods for breakfast. I don’t like heavy foods in the morning, especially since I don’t have much time to digest before exercising. I’ve been getting bored of smoothies and chia pudding, so I wanted to go back to classic cereal.

I’ve seen a few raw recipes for buckwheat cereal, so I figured I would give it a try. But as most people know, raw foods can be expensive. I always hate tossing the almond pulp from making almond milk. So I figured I would try and make it a binding agent for the cereal. It worked really well.

I first was exposed to it when I was little. My Aunt Hannah, who is Korean, brought over some “black spaghetti,” as she called it. The black spaghetti looked like packets of ramen, but instead of a soup, it was drained and covered in a sauce. I remember her teaching me the “best” way of cooking it, and going to the local Asian Market snatching them up. Fast forward to 2007. I watched the Korean Drama Coffee Prince. The first episode featured a Jjajangmyeon eat off, and dawned on me what my “black spaghetti” really was.

At the time, there weren’t many online sources for the dish and when checking out local Korean restaurant, none actually had the dish on their menu. The reason is that Jajangmyeon is based on a Chinese dish, Zhaziangmian. The original Zhaziangmian dish uses hoisin sauce, soy sauce, and various bean pastes to get the black sauce. The Korean version uses chunjang, which is a black bean sauce that is much sweeter than it’s Chinese counterpart. There are many differences, but today, you are likely to see Jajangmyeon at a Chinese restaurant in Korea. Think of it a little bit like General Tso in the US, distinctly American in it’s own right but you won’t find it anywhere other than a Chinese food shop.
