My goodness it has been a really long time since I’ve done one of these! I always try and write a review with any recipe I try online, make a category and hope they build up enough to be it’s own post. But that doesn’t always happen. Luckily my CSA forces me to try and figure out what to do with all these tomatillos so this post has been in the works for TWO YEARS!

Why did this take so long? Well I wanted to feature recipes that weren’t just salsa verde. I mean I made my own salsa morado, but I mean- it is just a salsa verde XD So I give you quite a round up! I hope you enjoy it, and there is even a sweet treat as well!

Roasted Tomatillo Hummus

I am frequent reader of Fragrant Vanilla Cake and saw this recipe using tomatillos in hummus. I knew I had to give it a try since it is an interesting way to eat the fruit. The recipe is pretty easy, roast tomatillos, blend with the hummus ingredients, serve. I have to admit this is a delicious and tangy hummus. Very different than what most people are use to for their hummus. I could picture myself just eating it as a dip with chips.

But I used it mostly in wraps with breaded green tomatoes, lettuce, cherry tomatoes, and avocados. But I could use it in sandwiches, and a bunch of other ways. What makes this hummus so nice is that it is sweet and tangy but has lots of protein, so you get food that is nutritionally sustainable and filling.

Bottom Line: Quick and Easy, great for lunches.

Black Bean, Tomatillo, and Corn Soup

This is pushing the definition soup. It is more like a stew since it is so thick. It is indeed tasty, but I think there should be a little more broth to make it by definition a soup. Overall the dish is super healthy and full of vegetables and fiber. I think the longest part is getting all the vegetables prepared, especially since it calls for fresh corn. Because of this I think I would double the recipe next time so I could have leftovers to eat.

I also would add more tomatillos. Yes, you can taste them in the dish, but I wish there would of been more. I mean if you have tomatillos in the title, I better be tasting them. I think I ended up using more tomatoes in the soup than tomatillos! Aside from that gripe- I would give the dish a thumbs up on making it again.

Bottom Line: Easy and healthy soup. Recommend doubling the recipe for leftovers and adding more tomatillos.

Vegan Enchilada Suizas

I think what I’ve learned about these recipes is that maybe my tomatillos from my CSA are smaller than fresh tomatillos from the supermarket. So I doubled the amount of tomatillos in the sauce.

Looking at the recipe I felt like I probably should have a little more veggies in there, so I took away some of the beans, and added some sauteed sweet peppers. Also I didn’t use the suggested hot peppers in the sauce or any added salt since I was going to feed it to a 10 month old. Even without the salt, the dish carried itself quite well, but something to keep in mind with the spice levels.

Overall I loved the dish. I will make it again since it is easy to make and easy to prep ahead of time. I blended the sauce in the morning while my blender was dirty from smoothies. I set aside the sauce, so when it came to dinner time I just cooked the sauce, and put together the enchiladas.

My biggest complaint is that she doesn’t specify which sized tortilla wraps. I have “taco” and “burrito” sizes wraps, and I didn’t know which size, so I just made four big enchiladas as appose to six. Not the end of the world, but I can’t be the only one out there that didn’t grow up on enchiladas.

Bottom Line: Baby Approved, Just would make more sauce

White Bean Tomatillo Soup

This soup is much more “tomatillo-y” compared to the black bean recipe. This one uses a lot of beans and a lot of tomatillos. This is a simple soup that lets you enjoy the taste of tomatillos. Aside from cooking dried beans, the recipe doesn’t take long to make. All I did was soak the beans overnight, cooked them in the morning, then made the short 30 minute recipe. Though you could soak the beans in the morning and cook the soup for longer if you have the time to wait.

My only complaint is that she calls for 4 cups broth, 2 cups water. I feel like just sticking with 6 cups broth/stock would give a fuller flavored soup. Maybe it is to save people money? Most stocks are sold in 4 cup containers. Who knows. I didn’t read the 2 cups water so at first I had a very thick soup. Oops. But I really liked the recipe. Full of flavor, simple, and easy peasy.

Bottom Line: Super healthy and yummy soup. Would use all 6 cups of stock instead of part water.

Tomatillo Green Apple Sorbet

Sometimes recipes are so simple I find a hard time with them! Enter this recipe for a Green Apple and Tomatillo Sorbet. First what I ended up with was delicious, but there was a lot of last minute changes that I had to make.

The first change I had to make was that the portions on the site didn’t add up for me. It should I should of had about 2 1/2 cups by the end of the cooking process, but I had more like 1 3/4 of a cup. Eek! I quickly doubled the apple and tomatillo, started to cook them again, and got about the right amount. Blended it up and popped it in the fridge. Then when I put the sorbet in the ice cream maker, there didn’t seem to be much. This is something that annoys me with ice cream recipes. It takes a lot of work to make ice cream, and making just enough for two servings is a pain. So I quickly dumped some extra coconut milk into the ice cream maker.

The end result? A SUPER delicious recipe. Since I probably cooked the apples too much, I got a tart but semi caramel-like sorbet. The best part is that the ice cream kept really soft in the freezer, one of my first times doing so! I think adding the coconut milk in the end helped with the tartness. If I make this again, I will totally make some changes to the recipe, and you might find a similar recipe on the blog next year.

Bottom Line: Great inspiration. Overall great results, not sure if I will make this recipe 100% exactly the same

Chunky Tomatillo Tostadas

I took some liberties to switch this recipe up a little. Yeah, I got a little lazy in the tostadas part and was starving. So these got transformed into tacos. Oh well. I tried to keep the toppings in the spirit of the original post and let’s face it, a corn shelled taco isn’t too different from a tostadas. Personally the dish probably would of worked best in tostadas form, so keep that in mind. 

Naturally my main complaint is that recipe calls for x amount of tomatillos, not going by poundage. I added more to the recipe since the tomatillos picked from my CSA were a little smaller than most commercial grocery stores. Aside from the resulting faster cooking time, everything worked out great! The whole recipe will probably take an hour from beginning to end but is very easy to get the prep work done, and has a lot of hands off time. 

I really love how there were bursts of tomatillo flavors hidden in the pinto beans. I think there should be a little bit more tomatillo to bean ratio, but aside from that it is a great mix. As mentioned I made tacos instead and paired them with lettuce, avocado and tomato (no sour cream mix.) I will be adding this to my rotation during the next tomatillo season at my CSA

Bottom Line: Takes some time, but overall very easy and hands off.

My goodness this week was pretty crazy! Everything crept up pretty fast and then it became the weekend. I figured I need to spend more time working at settling down in the house than updating the blog, which is why I haven’t been that good at updating the 365 posts on Saturday anymore. Oh and because of the farm trips. It is peach season here so every single week has involved us going to our CSA, and then going to the orchard. This week we picked so many peaches that we made chutney. And I am thinking that we still have enough for jam. Wow.

Alexa and I are also busy for VEGAN MONTH OF FOOD! They have a list of prompts and we will try and stick to them. We have some good ideas planned, and some not so much. So we will see how it goes. Especially with the 365 idea. I am not sure how I will incorporate that into the posts.

Anyways, I might not be as active the next week or so while we try and get our ducks in a row for Vegan MOFO. We also may or may not continue with the 365/Sunday Reads posts during that month. But I guess only time will tell what will happen.

Reading for the Week:

Jon and I are planning Halloween already. Gonna watch 6 episodes of Treehouse of Terror on Halloween, and we will be watching plenty of horror films and Goosebumps (hubby’s choice) for the month of October. And since we are in our first home, I said we would buy halloween candy, and showed my husband this PETA list of vegan candy to show him that we won’t get egged. (because that wouldn’t be vegan either)

I always like to put in some film info on this blog, and I love soviet russian media! Especially film! So I have to share this super bizarro propaganda film. It is a mixed media animation that takes place in space. Very surreal. Very cool visually.

So Alexa and I missed Sailor Moon Appreciation Day?

This week we got a watermelon, which is perfect timing because I’ve been craving some after seeing this huge watermelon!

This hot weather is making me swoon over this matcha mint sugar scrub.

I love how Gina breaks down protein in this new post. She makes it pretty simple and easy to figure out how much protein you need in your diet, and gives some great options. And she makes me feel better for giving my husband whole wheat PB&J sandwiches- 15 grams of whole protein? Hell yeah.

Washington Post asks the question- why aren’t conservatives going after fertility clinics if they don’t want fetuses to die?

I know that this isn’t the most vegan all videos. A giant heart…. but I know that sometimes these are the types of things that really get people to connect to other animals. Hopefully it helps put things in perspective for you, humans are the center, or the best.

I love Healthcare Triage because they don’t pussyfoot around. Aaron lays down exercise for what it is- a lot less that what we expect but really beneficial! I am always telling people that you don’t need to run a marathon- just moving. Like to garden? Do that! Cleaning the bathroom? That is actually fairly vigorous activity.

Another Healthcare Triage video that I think is pretty interesting. It goes over what the fuss is about Flibanstein and talks about human trafficking.

This has been a crazy busy week. Alexa has been up to her neck in bridesmaids duties. And I have been in one of those so busy but I don’t know why sort of weeks. Well, truthfully I think a lot of my “business” is simply working longer hours. Suddenly there is a surge in frame jobs coming in, which is great. One cool thing that come in were Hardy Boys original paintings. They were from the books rereleases from the 90s. We got the painting from Sky Sabotage and The Voodoo Plot. The customer says he has a bunch of paintings he bought and never framed, so that is something I am looking forward to at work.

I think since I’ve been so busy I think I picked out more fun reads and such for the blog. I hope it cheers you guys up.

This looks so yummy, and I am not the type of person who particularly likes making their own nut butters.

Veganism:

I love when I find articles defending the almond industry. Yes they suck up lots of water, but cows use lots more from the food they eat.

This is an old article but a good one, 5 reasons for why animal activism is a feminist issue.

Ever hear people say veganism is white? I never fully thought that. Working at Animo I remember there being a few black vegan customers, which made me wonder why aren’t there more black vegans in the media? Well, there is a great post with 100 Black Vegans, helping bring some of these people out and in the public. I am surprised how many of the people are on the list have restaurants! So many I now would love to check out in a road trip.

My cat waits for Jon and I to come back from our day out in Philly.

This week has been gross and drizzly. I’ve been sooo unmotivated. Sure I’ve been running, but it has been slow and not very fun. I didn’t want to cook or clean or even read. Nothing has been touched on the blog for the most part. But this weekend really spun everything around. Just Saturday morning I made a grocery list and I thought “my god, I just decided on 4 new recipes that I can put on the blog….” Funny how weather can effect your mood and creativity.

So this weekend has been beautiful. Saturday I went for a 3 mile run that usually takes me 30 minutes. When I got home my husband looked shocked and asked if I took a short run that morning. I just had a great run and really enjoyed myself, I guess it reflected in how fast I ran! We went into Philly for the day to see the new Kano exhibit. We then proceeded to walk to the art museum (2.75 mi), then walk to Blackbird Pizzeria (3 mi) and ate a whole pie together. Then decided to walk to the train stop furthest from the pizzeria (1.15 mi). We walked a whopping 6.9 miles, not including walking around the museum. So my little feet traveled 10 miles overall! I think I deserved all 4 slices of the best vegan pizza ever. (in case you wondering our pizza had arugala, cherry tomatoes, seitan sausage, pumpkin seed pesto, pepper flake, and tofu ricotta.)

Recipes:

I just bought a bunch of mangos (14 champagne mangos to be exact!) and I think these beer-battered tofu tacos with mango salsa need to be made!

Speaking of mangos, there is an AWESOME Mango Carrot Cake that I should of made for Easter dinner. Bummer.

Health News:

I remember so many conversations about feeling “fat” when I worked at a restaurant and after a certain point I choice not to participate in those conversations (not even saying ‘but you look so good!’). There is a good reason why I wouldn’t participate, fat talk is bad for our mental state.

Although I don’t think all of America’s obesity problem isn’t really a problem (some people simply eat too many unhealthy foods) but this article reminds us that skinny doesn’t mean healthy, and fat-shaming isn’t healthy either.

This is an interesting article about how studies found that people were happier with spending their money on experiences and not things.

This article wasn’t what I was expecting, it was better. I think making children diet is horrible. If your child needs more exercise or a healthier diet, to me, that means the FAMILY needs to exercise and change their diet.

I looked at it and thought “I think I saw something like this!” Turns out they have some in Philadelphia and I think Jon and I passed by it. I tried finding some pieces and I have a feeling some might of been taken down already. Bummer. But I’ll try again soon.

Anyone remember livejournal? I wasn’t huge on it, but this article reminded me of my techie teenage years.

I love this photo shoot on Specs and the City. I love the liberation of self made fashion shoots, but I am not a huge fan of being in front of the camera, I rather be behind it. Maybe I should do a shoot with Alexa…?

I’m super in love with these new nail wraps. I’ve been wearing the same wrap for the ENTIRE WEEK! Which is a big deal considering my nail polish chips on the same day. I’m going to have to stock up.

This new documentary about queer farming (farmers that are queer, not queers harvesting more queers, duh) looks bitchin.

This video is a little long, but well worth the watch. Maysoon Zayid is a funny woman and has some great point about disabilities in the US.

I watched Major Lazer’s video for Get Free for the first time. It was awesome. The filming is very cinéma vérité and makes me think of documentaries like Harlan County, USA and Always for Pleasure.

Mind blown by this fish:


Depending where you are, this recipe roundup is either late or just in time. Anyone on the northern hemisphere is coming out of winter and are probably looking for iced tea recipes. But if you are in the southern hemisphere, you are probably dreaming of hot chocolate and lattes. This post right now is for you guys.

I usually start these posts by talking about all the recipes as a whole. But truthfully, it is hard to talk about all these recipes and not compare them. Out of all the different styles and techniques, I noticed one ingredient made one hot chocolate shine out of all the others- using chocolate bars. Yes, out of all the different recipes the Luxurious Dairy Free Hot Cocoa from Oh She Glows takes first prize. Why? Well she uses chocolate that isn’t just in a powder form. Using a chocolate bar or even bakers chocolate, she adds a whole lot more dimension to the dessert. That being said, all the other hot chocolate recipes would benefit from using a chocolate bar over cocoa powder. But all the different hot chocolates have their positives.

Hot Cacao with Cinnamon, Coconut + Dates

This sounded super yummy and low in fat. Sometimes I don’t like how rich hot cocoa can be. Emily uses coconut to make the milk base, and uses ginger tea and cinnamon to add flavor. The end result tastes great, I love how you get a kind-of chocolate chai drink. But, I found that even with long blending, the coconut didn’t blend all the way. If I made this again, I would probably toss the coconut in while the tea was brewing.

Bottom Line: A little chunky, maybe pre-soak coconut

Luxurious Dairy Free Hot Cocoa

I love the idea of being able to make hot cocoa from scratch instead of using mixes. Most mixes have dairy in it so why not just make it from scratch? This recipe uses an actual chunk of chocolate, making the drink incredibly rich. And if that isn’t enough, she uses a little cocoa powder as a big double punch. The biggest downside? It makes more than just one serving. I probably have “two servings” and added the rest in a smoothie for my husband to make sure it didn’t go bad.

Bottom Line: Whoa so perfect- hope you have friends to share with

Vegan Nutella Hot Chocolate

I wanted to love this recipe so badly, I mean come on guise?! Nutella AND hot chocolate? Well, it was pretty good, but I think it could of improved. The drink was too bitter, and probably needed a little more sweetener. I probably would of also included some melted chocolate to the recipe, mostly because if the name is going to include nutella, I want it to be RICH!

Positives? The recipe is super easy to cut in half, if you don’t want to make four servings (let’s face it is more like two or three servings). The drink was really smooth, which I liked as well.

Bottom Line: Good, want it to be richer

Vegan Chai Hot Chocolate

This recipe is pretty simple, milk, chocolate, and chai mix. Luckily, it links to another part of the blog that gives a recipe for a homemade chai spice mix. The mix is okay, focusing mostly on ginger, which I though was weird since I smell more cardamom than ginger in chai teas. This is easily overlooked with the final product, I can barely taste the ginger! The recipe is alright, the chai spices give an interesting variation to hot chocolate, but I found myself adding more sweetener to my hot chocolate.

Bottom Line: Not bad, added some sweetness

Raw Maca Maple Hot Chocolate

I feel like I have a sneaking hunch that there might be a misprint in the recipe, because my drink didn’t look like hers and had too much of a chocolate taste. The drink was really bitter, and I found myself adding the max suggested maple syrup AND some liquid stevia. I think if I divided the chocolate in half, meaning 1/8th of a cup for two servings, instead of 1/4th, I would be much happier with this drink. The plus? It was easy to halve, and therefore making only one for me. It is easy to make whenever, just add ingredients and enjoy. I cheated and used store bought coconut milk that is in the refrigerator non-dairy milk section (instead of making a raw-homemade version).

Bottom Line: Too bitter, not enough maca & maple flavors

Pumpkin Spice Hot Chocolate

This hot chocolate has an nice thick creamy body. It is so thick and creamy from the pumpkin puree, not from fats. The drink isn’t too bitter, but leaves too much open ended with how much to sweeten the drink. I like having defined measurements sometimes, if anything suggested amounts. The overall drink didn’t scream pumpkin or pumpkin spice. In fact, I probably would ditch the pumpkin spice, and just leave as is. The pumpkin got overwhelmed by the chocolate, and I am okay with that. As mentioned the pumpkin did much more for the body and texture of the drink.

Bottom Line: Thick creamy, and delicious
